on olives and the long life

Longevo is built on a simple belief: extra virgin olive oil deserves to be understood.

For thousands of years, the olive tree has endured where civilizations have not. From the groves of Andalucía to the terraces of Crete, olea europaea has stood as a symbol of continuity, wellness, and vitality. Yet modern olive oil culture is often fragmented — diluted by marketing, obscured by fraud, or simplified into trend.

Longevo rejects simplification. Extra virgin olive oil (EVOO) is not merely a cooking fat or a condiment. It is a living agricultural expression, a regional identity, a craft defined by precision, and can be the pillar of a long and healthy life.

Longevo exists to explore extra virgin olive oil as a living agricultural product, shaped by soil, climate, and human decisions. Something with chemistry, personality, and consequence. Something closer to wine than to cooking fat.

The name comes from the Spanish word longevo — long-lived — a nod to longevity, and to Spain, the largest olive oil producer in the world.

This is a journal for the curious — and for those who suspect there is more to olive oil than they’ve been told.
